Proton
Proton is end-to-end encrypted, so nothing outside your device can read it. That is the point of Proton, not a gap to fix.
Do this once: Keep it as the private vault. Export a specific thread as .eml when a case needs it.

Why I still can't just reach into your phone

Your trust isn't the blocker — the phone makers are. Samsung, Apple, Google and every bank refuse blanket third-party access on purpose, so a stolen connection can never open a person's whole life. The workaround is the export: you request your own archive once, drop it here, and it gets indexed on your device. Same result, no credentials held anywhere. That protection is the same one that keeps anyone from doing this to you.
